Courgette Pasta Sauce

It’s no mystery that pasta is a staple in Italian cuisine. A lot of families I know will eat it at least once a day, usually for lunch. We are definitely not one those families as I would just get too bored with cooking the same thing every day, so we stick to once a week and even then I try to mix it up with a different sauce each time. I always try to make our family meals as nutritionally balanced as possible, incorporating carbs, protein and veg. That’s what this super simple and quick recipe does!

Ingredients


200 g of pasta (in the shape that you prefer. It works super well also with Orzo pasta. Gluten-free if preferred)


3 courgettes


150 g cream cheese (vegan if preferred)


1 small onion


Instructions

Boil the pasta according to the packet’s instructions.

Grate the courgettes and gently fry them in a pan with the finely chopped onion, until they are cooked and soft.

Add the cream cheese and mix. If you find it too thick, add one tbsp of cooking water from the pasta.

Once the pasta is cooked, drain and mix everything together. Enjoy!
