Birthday Cake Protein Balls

Whether you need some sprinkles in your life to cheer up your day, are a sprinkles fan or are celebrating a birthday, these Birthday Cake Protein Balls are the perfect celebratory snack to have! These require simple ingredients and are no-bake and gluten-free. I’m known to be a huge snacker and the best way to prevent me from getting off track eating healthy is to meal prep my meals and snacks! Luckily, these Birthday Cake Protein Balls require little time to make and can be stored in the fridge until ready to eat!


Most of these ingredients you should have as staple items in your pantry and if you don’t have sprinkles on hand, you can always leave it out of the recipe. Trust me, it will still be as “fun” to eat without it.

Ingredients

  • 1/2 cup vanilla protein (I use Orgain's vanilla plant-based, vegan protein powder)
  • 1/2 cup almond butter (or cashew butter)
  • 1/3 cup maple syrup (add more as needed)
  • 1/4 cup coconut flour (I use Bob's Red Mill)
  • 1 tsp almond extract optional (I didn't use it and it tasted just as great)
  • 1/4 cup white chocolate chips (I used Lily's Sweets; you can also use milk chocolate chips)
  • 1/4 cup rainbow sprinkles
  • 1 tsp salt
Instructions

In a mixing bowl, add all the ingredients and form together with a spatula. Only use a little of the sprinkles in the mixture and save the rest to coat the balls.
Roll into 1-2 inch balls. If the mixture is too dry, feel free to add 1 tbsp of water at a time until it can form nicely into a ball.
In a small bowl or plate, add the sprinkles and coat each ball pressing gently into the sprinkles.
Store in a tightly sealed container or plastic bag in the fridge up to a week and enjoy!
