Loaded Pulled Pork Sweet Potato

This loaded pulled pork sweet potato packs a lot of flavor into a delicious and filling dish and has become one of our favorite recipes while doing Whole30. When we decided to do another Whole30, this sweet potato recipe was quickly added to our list of “must-have” meals. We actually like this recipe so much that we eat it on a regular basis, even when we are not doing Whole30.

Part of what makes this recipe so tasty is the pulled pork. It’s incredibly easy to make your own pulled pork. Once one of my dear friends shared this pulled pork recipe with me, it’s the only one I use!

What’s so great about this loaded pulled pork sweet potato is that you can easily customize this recipe and come up with your own toppings. Our entire family loves this meal, including our 5-year-old daughter.

Ingredients
Baked Sweet Potato
  • 4 Sweet Potatoes Cleaned and scrubbed
  • 1 Tbps olive oil
  • Pinch Sea Salt
Pulled Pork (Needs to Be Made Ahead)
  • 1.5 Lbs. Pork Shoulder
  • 15.5 Ounce Green Salsa Verde (I really like the Late July Snacks Salsa Verde Mild)
Toppings
  • 1 Cup Shredded Red Cabbage
  • 1 Bunch Cilantro
  • 1/2 Cup Finely Chopped Red Onion
Instructions
Pulled Pork*
*Pulled Pork needs to be made ahead of time. I find it's easiest to put the pulled pork in the crock pot before leaving for work for the day.
Place pork shoulder in crock pot
Pour one can of green salsa verde on top of pork shoulder
Cover crock pot with lid and turn on to low setting for 6-8 hours.
Once pork shoulder is cooked, remove from crock pot and shred pork. It should easily fall apart when separating with a fork.
Sweet Potatoes
Pre-Heat Oven to 425 Degrees
Line Sheet Pan With Aluminum Foil
Clean and Scrub Sweet Potatoes
Cut of ends of Sweet Potatoes
Drizzle Olive oil on sweet potato skins. Use your hands to rub the olive oil all over the potato
Sprinkle sweet potatoes with sea salt
Place sweet potatoes into preheated oven and cook for approximately 1 hour (cook time will depend upon the size of your sweet potatoes)
Putting It All Together
Once the sweet potatoes are cooked, slice them open and serve.
Sometimes it's fun to make a potato bar and let everyone put their own toppings on their loaded pulled pork sweet potato. Otherwise, if you are serving each plate, place the cooked pulled pork on top of the sweet potato and then add desired toppings.
