DO NOT BUY SIRLOIN ROAST or STEW MEAT that has been cut into chunks. It is a meat cut that needs to be cooked low and slow and turn out super tough to chew if you try to use it in this recipe. You can also ask the butcher for help and tell them what you are planing to make just in case.
