Blackberry and Lavender Simple Syrup

Simple syrups are a quick and easy way to zhuzh up all kinds of recipes. You can buy most syrups at the store - - but why do that when you can make your own creative flavors?


Sugar, water, and the herbs/fruit are all you need. Simple, right? Plus, the process of simmering the syrup will make your home smell like a dream!


I chose to combine blackberry and lavender for this syrup. The blackberry adds a bit of tartness as well as a beautiful color. Once the syrup was reduced, I used a mesh strainer to sift out any fruit and lavender bits. I then used a funnel to pour into an airtight bottle. You can get airtight bottles if all sizes on Amazon or IKEA for reasonable prices.


Simple syrups can be added to cocktails, mocktails, coffees and teas, desserts...whatever you can dream up!

Ingredients

  • 2 cups extra fine granulated sugar
  • 1 1/4 cups water
  • 1/4 cup dried lavender buds
  • 10-15 blackberries (fresh or frozen)
Instructions

Add sugar and water to a medium saucepan and stir to start dissolving the sugar
Add lavender and berries and bring to a rolling boil
Reduce heat to medium and let simmer for 10 minutes
Remove from heat and cover. Let steep for an hour
Pour through a fine mesh strainer. Press on the fruit and buds to get any extra juices and color
Use a funnel to pour into airtight container and store in fridge. Will keep for several weeks
Tips
  • Fresh or frozen berries will work! You may just need to steep frozen a bit longer to get desired color
