Bean Medley Salad
After all the holiday food lately, this has been my go to lunch! It is super healthy and only requires minimal ingredients. It takes no time to put together and is also super filling. Not to mention delicious!
I love all types of beans and legumes. They are full of fibre, protein, healthy carbs and fats. Also they are one of the cheapest ingredients! However I do always recommend opting for low sodium cans of beans and legumes. This salad includes chickpeas, red kidney beans, romano beans, and white kidney beans.

- Prep time: 10 Minutes|Cook time: 1 Minutes|Total time: 11 Minutes
- Whisk together juice from 1/2 lemon, olive oil, red or white wine vinegar, salt, and pepper
- Pour the vinaigrette over the beans and arugula
- Mix together well and add feta cheese
