Hearty Tortellini and Spinach Soup

I always have a hard time admitting this, but I am not a huge fan of pasta. I guess a better way to put it is that I am SUPER picky about pasta. The exception is tortellini. I think it is because it has a filling, but also because it can be eaten in so many ways. My favorite is in soup. I created this Hearty Tortellini and Spinach Soup with cold days in mind although we only have a handful of those in Phoenix! With the addition of ground beef, this soup is sure to fill you up. I used cheese-filled tortellini, but feel free to mix it up. Even if you don’t love pasta, this soup will warm you from the inside out and leave you full and happy.

Heat a large soup pot over medium high heat. Add olive oil and heat. Add the garlic, onion and red pepper. Sauté until onion is softened.
Add ground beef and cook until browned and no longer pink.
Add chicken broth, San Marzano tomatoes, spinach and tortellini. Bring to a boil and cook and until the tortellini is heated through. Taste for seasoning.

    I make this same soup with a mild Italian sausage instead of hamburger and it brings a great flavor to it. Overall whether it is sausage or hamburger this is a hearty fulfilling soup that I would recommend.

    Are these canned whole tomatoes or can you used crushed or diced?

      I used whole canned tomatoes, but you can use diced as well. The San Marzano tomatoes just add a rich depth of flavor!
