Our kids are always asking for breakfast for dinner. So, we decided to have a little fun and make these delicious and easy Vanilla and Cinnamon Pancakes!


We love pancakes for breakfast, but there is something special and exciting about having them for dinner! It's not something we do very often, so we try to reserve this sweet indulgence for special occasions. There are ways to make this meal healthier, like by adding some fruit to the pancake mixture or serving the pancakes with yogurt or a healthy protein side dish.

Ingredients

  • 1 cup flour
  • 1 T brown sugar
  • 1 T white granulated sugar
  • 1/2 t salt
  • 1/2 t baking powder
  • 1/2 t baking soda
  • 1/2 t ground cinnamon
  • 1 cup milk
  • 1 egg
  • 2 T melted butter
  • 2 t vanilla
  • 2 T butter
Instructions

Combine and mix dry ingredients together in a large bowl.
Combine and whisk together wet ingredients in a separate, medium bowl.
Slowly add wet ingredients to bowl of dry ingredients and whisk until evenly mixed.
Meanwhile, melt 2 T butter on a skillet at medium heat.
Pour batter onto heated skillet, about 1/4 cup at a time. Once bubbles appear on pancake (after about 1-2 mins), use a spatula to flip pancake over. Cook pancake for another 1-2 mins or until lightly browned.
Tips
  • Serve pancakes with butter, syrup or other desired toppings.
  • We recommend all children's meals be served with milk.
