Sweet and Spicy Basil Chicken

When you think of Thai food, you should think of sweet, spicy, fresh foods with aromatic herbs. This Sweet and Spicy Basil Chicken is no exception! One night, we were craving Thai food and specifically Thai Basil, so we decided to whip this up. We loved this recipe so much, we decided to make it a couple more times and perfect it.

Val and I checked out Chef’s Table and there was a couple that owned a traditional Thai restaurant. We learned that Thai food traditionally has a lot of sugars because of the availability of cane sugar. The sugar adds the sweetness we taste in most recipes, from  Pad Thai to  Thai Green Curry. We didn’t end up adding any sugar to our  Drunken Noodles recipe, but if we did, it would only get better. This Sweet and Spicy Basil Chicken will have all of the flavors you want. Its sweet, spicy, and the best part is that you won’t get bored of it.

Val and I love Thai food probably more than any other food type. We like to actually add extra spice to our recipes, but for all of our readers, we just put the normal amount. If you want, we recommend either sriracha or Thai chili paste. Both of those add the wanted heat but not much more flavor that will kill or over power the other flavors.

I think one of the best things about Thai food…. The leftovers! This dish is even better days after because all of the sauce and noodles have set. When you heat this Sweet and Spicy Basil Chicken up in your microwave, your mouth will be watering. Don’t be shocked if you actually like it more the next day. Welp, that’s all from us this time.

Sweet and Spicy Basil Chicken

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • ½ cup chicken broth
  • ¼ cup brown sugar
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp Thai chili paste
  • ¼ cup shredded basil
  • ¼ cup warm water
  • 2 chicken breasts cubed
  • ½ yellow onion diced
  • 1 red pepper diced
  • 1 package wide rice noodles
Instructions

Bring a pot of water to a boil and add chicken
Cook until chicken reached 155-160° and scoop out from the water
In a large wok or sauce pan over medium heat add oil to pan
Once oil is heated add garlic and saute until fragrant. Then add peppers and onions
Slowly pour in chicken broth and bring to a simmer
Add brown sugar, oyster sauce, fish sauce, Thai chili paste, and shredded basil
Mix together well and let simmer and add in water
Cook noodles according to the package directions and add to the sauce with the chicken
Mix well for a few minutes over low heat and serve with fresh basil on top
