This recipe is a classic, warm oatmeal cookies out of the oven, the entire house filled with the scent of butter and cinnamon always reminds me of the holiday season.

Here i have a created a classic oatmeal cookie recipe that can also be adapted to a more extravagant cookie just by adding some different toppings to the batter. I enjoy changing it up a bit with chocolate chips, coconut, almonds, and if you’d even like to add a tablespoon of Nutella or almond paste that is always a bonus.

This is the classic oatmeal cookie. In my opinion the classic taste of these cookies are a winner every time you make them. In the pictures you will see some of the cookies I have added chocolate chips to and some were even coated in coconut to give it a nice twist as well.

How can you go wrong with cinnamon, chocolate, and coconut?

one evening we made cookie sandwiches with these cookies. We took the classic oatmeal cookies and placed vanilla ice cream inside, it was incredible.

For the batter


Heat oven to 190 degrees Celsius
In medium size bowl whisk together the butter, white sugar, brown sugar, eggs, and vanilla extract
In a separate bowl add the flour, baking soda, salt, cinnamon
Slowly add the dry mixture into the wet mixture
Lastly add in the 3 cups of oats and mix well
If you are choosing to add chocolate chips now is the time Then place the batter in the fridge for 45 - 60 minutes (You can even make the batter in the evening and leave it in the fridge over night to bake in the morning)
Place parchment paper on a baking sheet, place cookies about 2 inches apart. You will probably have to make about 3 to 4 batches
Bake for 8-10 minutes Check the cookies after 8 minutes and continue to add another minute each time. As soon as you see some golden brown color pull them out. As the cooking process continues even after you have pulled them out of the oven
Let the cookies cool down, and then enjoy 😊


  • Having the batter sit in the fridge is very important... the butter sets which will then give you chewy and soft cookies after they are baked
  • I recommend coating the cookies in shredded coconut before baking, it adds a nice twist to this classic recipe
