Pecan pie might reign supreme for holiday desserts, but this delicious pecan pie smoothie can be enjoyed any time of day AND guilt-free. Enjoy the nutty, rich flavors only pecans can provide paired with a hint of pure maple syrup, enriched with flax meal, and spiced with the classic fall favorite...ground cinnamon. As with pie, pure vanilla extract rounds out the sweetness and makes this feel like the holidays. Substitute ingredients with what you have on hand, or follow the specifics of this recipe for a vegan-friendly option! Ingredients

  • 2 cups ice
  • 1 1/2 cups milk (we used soy milk)
  • 1 1/4 cups raw pecans (soaked and drained)
  • 2 bananas, frozen
  • 1/4 cup pure maple syrup
  • 1 tbsp flax meal
  • 1/2 tbsp pure vanilla extract
  • 1 tsp ground cinnamon
Aquafaba Topping (Optional)
  • 4 tbsp aquafaba
  • 1 tsp pure vanilla extract (add more to taste)
  • 1 tbsp coconut sugar add more to taste, or substitute with sweetener of your choice
Instructions

Combine pecans, bananas, flax meal, and soy milk in blender and blend until smooth. You will have very small pieces of pecans that add golden flecks to the liquid.
Add maple syrup and the pure vanilla extract. Blend again to incorporate.
Add ice and blend until you reach desired consistency. If needed, thin with more milk or water.
Aquafaba Topping (Optional)
Add aquafaba, sugar, and vanilla extract to bowl of a stand mixer. Mix on high for several minutes, or until the aquafaba reaches stiff peaks. Add more sugar, if desired.
Add a large dollop to smoothies and sprinkle with nutmeg.
Tips
  • Use the milk of your choice.
  • Add your preferred sweetener if maple syrup is not available. Though Truvia and granulated sugar work well, add a few teaspoons at a time to ensure you reach the desired sweetness level.
