Leftover Thanksgiving Sandwich: Croque Madame

Have you ever had a croque madame? It’s my favorite sandwich for brunch! Normally, you smother sourdough in a bechamel topped with gruyere, ham and a fried egg. We are using Thanksgiving leftovers so you will need stuffing, turkey, gravy and cranberry sauce. Stuffing waffles covered in a cheesy gravy topped with turkey, extra gruyere and a runny egg. This leftover Thanksgiving sandwich is decadent!

Start by making the stuffing waffles. Add an egg to your stuffing if it doesn’t already have it! This will help keep the waffles together. Then, instead of bechamel, we are mixing leftover gravy with gruyere. Top the waffles with cranberry mustard, turkey, cheesy gravy, and a bit more gruyere. Broil until all melty and then top with a fried egg! Super decadent and delicious.

Ingredients

  • 4 cups leftover stuffing
  • 2 eggs
  • 1 lb leftover turkey sliced or shredded
  • cup chicken or turkey stock
  • 2 cups leftover gravy
  • 8 oz gruyere cheese shredded
  • cup dijon mustard
  • cup cranberry sauce
  • 4 eggs
  • 2 tbsp oil
  • salt and pepper to taste
Instructions

Preheat oven to 350 . Combine turkey and stock in a baking dish and cover with foil. Bake for 10 minutes until turkey is heated through.
Preheat a belgian waffle maker and spray with cooking spray. Mix together the eggs and stuffing. If your stuffing already has eggs, you can skip the extra eggs. Once the waffle iron is ready, add the 4 cups of stuffing and close the waffle iron. Cook for about 10 minutes until the waffles are crisp .
Heat the gravy in a pot over medium heat. Once hot, add 6 oz of the shredded cheese and mix until melted.
Mix together the mustard and cranberry sauce in a medium bowl.
Once the turkey is out of the oven, turn the oven to broil. Cut waffles into 4. Place the stuffing waffles on a foil lined baking sheet. Spread 1 tbsp of the cranberry mustard onto each waffle. Layer each waffle with turkey and then pour cup of the cheese gravy on top. Sprinkle the rest of the shredded cheese over top. Broil on high until the cheese is melted.
Meanwhile fry the eggs. Heat a nonstick skillet over medium. Add oil. Once hot, add the eggs and cook until the whites are set but the yolks are still runny. Season with salt and pepper.
Top the sandwiches with the fried egg and serve hot.
