Who doesn’t love a little fritter action, and these chickpea, lime and turmeric fritters are to die for. Every bite is packed with flavour, taste so fresh, they’re a perfect filling snack or appetizer and they’re vegan and gluten free. I love finding and creating fun healthy recipes like this one, that don’t taste TOO healthy (aka like grass). I created this recipe first a few weeks ago…however, I left them on a plate while I went to write down the ingredients. When I returned to the kitchen to photograph my lovely fritters, all I saw was crumbs and an empty dish of aioli, and my mom and dad hovering nearby with a guilty look… in my house, food cannot be left unattended, or it will be consumed almost immediately.

Anyway! These fritters are ready and in your mouth within 20 minutes, we love that! all you need to make them is a food processor (ideally) to combine all your ingredients and do the dirty work for you. If you don’t have a food processor, you can use a masher or a fork to crush the chickpeas and combine the ingredients, with just a little more elbow grease!

Ingredients
chickpea fritters
  • 1/4 cup of grapeseed oil (for frying)
  • 1 398 ml can of chickpeas, drained
  • 2 tablespoons gluten free all purpose flour
  • 1-2 tablespoons water
  • 1/2 cup chopped kale
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon onion powder
  • juice of one lime
  • salt and pepper
dill aoili
  • 3 tablespoons vegan mayonnaise
  • juice of half a lime
  • 2 tablespoons chopped fresh dill
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon dijon mustard
  • salt and pepperr
Instructions

Combine all the chickpea fritter ingredients in a food processor and blend until well combined, but do not puree, you want the texture to be slightly chunky
heat grapeseed oil in a pan on medium-high heat.
roll the fritter mixture into ball and flatten into disks about 1- 1 1/2 inch thick. Place disks into the oiled pan and fry each side for 3-4 minutes, until a golden brown colour is achieved.
remove fritters from the pan and place on a plate covered with a paper towel to drain off the excess oil.
meanwhile, make the aioli by combining all ingredients (vegan mayonnaise, lime juice, dill, mustard powder, mustard and salt and pepper in a bowl and whisk until all lumps are out.
Serve fritters warm and dip in dill aioli, enjoy!
Tips
  • if you do not have a food processor, make fritter ingredients in a bowl with a masher or a fork
