Black Bean Burrito

The theme of this month is quick meals that require minimal equipment, ingredients, and time.


Second up in the series is once again a meal a'la Mexico - a burrito featuring black beans, rice, cheese, peppers, and nacho chips. Ready in under 5 minutes if you don't count cooking the rice, and requires no preparation whatsoever.

To make things even more convenient, instead of using fresh bell peppers, I used a frozen mix of pre-sliced colourful bell peppers. Simply popped them on a pan and heated up together with the black beans, et voila! Doesn't get much easier than that!

Ingredients

  • 3 tortilla wraps
  • 90g (1/2 cup) brown rice, dry
  • 1/2 tin of black beans, drained
  • 50g (1/3 cup) frozen bell pepper mix or one small bell pepper, sliced
  • 30g (1/4 cup) grated cheese of choice
  • A handful of nacho chips, crushed
  • seasoning - salt and pepper to taste, 1/2tsp chilli
Instructions

Cook the rice as per instructions on the packaging
Drain the water, add in the bell peppers, and let cook on small heat until the peppers are soft
Add in the black beans and cheese, heat up for a couple of minutes, and crush in the nachos. Season and mix well.
Wrap up in the tortilla wraps and enjoy!
