Pumpkin Bread Trifle

For our Thanksgiving dessert this year, I wanted to create a pumpkin themed recipe that included layers and textures, because I seem to be all about those two lately.


A trifle seemed fitting. How about a Pumpkin Bread Trifle?!! That would check all of the boxes. A moist cake-like bread, upping the ante on the whipped cream by folding in a little bourbon, and then topping it all off with some delicious caramel sauce drenched in there.


This recipe is very easy to make. Mixing together the ingredients for the pumpkin bread takes just minutes, letting the oven take over for the baking time of 60-65 minutes.


Cutting the bread into cubes and whipping up the whipped cream, you're ready to put together the trifle.

Beautiful layers of pumpkin bread and bourbon whipped cream, then drizzled with caramel sauce.

If you don't have a trifle bowl, no problem. Here, I used brandy sniffers. Trifles can be assembled in almost anything, from wine glasses to jelly jars!

Ingredients
Pumpkin Bread
  • 1 can pumpkin 15 ounce can
  • 2 cups all purpose flour
  • 1 cup brown sugar packed
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/2 cup milk
  • 2 eggs
  • 1/3 cup canola oil
  • 1 tsp vanilla extract
Bourbon Whipped Cream
  • 1 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tbsp bourbon optional
Extra Ingredients For Assembly
  • 1 bottle good quality, store bought caramel sauce
  • 1/4 cup graham cracker crumbs
  • pumpkin pie spice
Instructions

Preheat oven to 350 degrees
Grease and flour loaf pan. Set aside.
In a large bowl, whisk together all of the dry ingredients.
Add pumpkin, eggs and oil to the dry ingredients.
Using the hand mixer, mix all ingredients on medium low speed, until well blended.
Pour batter into loaf pan.
Bake for 60-65 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes on wire rack.
Run a knife around the sides of the pan to release bread. Remove from pan and cool thoroughly on wire rack.
Bourbon Whipped Cream
Pour whipping cream in a cold metal bowl.
Using a mixer, mix on high speed until soft peeks form.
Add sugar, then beat until stiff peeks.
Carefully fold in bourbon.
To Assemble The Trifle
Cut pumpkin bread into 1 inch cubes
Place one layer of pumpkin bread cubes on the bottom of the glass.
Drizzle caramel sauce over cubes.
Put a dollop of whipped cream on top.
Repeat layering until you've reached the top of the glass.
Finish with one final dollop of whipped cream, and garnish with a crumbled graham cracker crumbs and a sprinkling of pumpkin spice.
