Ingredients
Chicken Parmesan
  • 2 chicken breasts, 4 if they are already thin
  • 1/2 cup of all-purpose flour
  • 2 beaten eggs
  • 1/2 cup of italian bread crumbs
  • 1/2 cup of grated or shredded parmesan cheese
  • 1 jar of marinara sauce
  • 2-3 tbsp of cooking oil to saute
  • salt and pepper to taste
  • basil to garnish (optional)
Instructions
For the chicken
Prepare your chicken breasts by slicing them in half to make two pieces and beat them down until they’re flat. It is easiest to do this by covering the chicken with plastic wrap. If the chicken breasts are already thin then you don’t need to beat them flat.
You will need three different bowls/shallow dishes. In the first one include all purpose flour, salt, and pepper. In the second dish, add two beaten eggs. In third dish, add the breadcrumbs and Parmesan cheese.
Before completing the next steps, preheat the oven to 350 degrees fahrenheit.
Once the chicken is prepped and bowls with ingredients are set, take one piece of chicken and add it to the first bowl to coat the chicken with flour, once it’s all covered move chicken to second bowl of egg wash, then finish by coating with bread crumb mixture in the third bowl. Do these steps with each chicken slice and once that’s all done the chicken breasts are ready to move to a heated oiled pan for cooking!
Wash your hands and turn on your stove to medium heat. Once the pan is hot, you can add your cooking oil and begin placing the chicken in the pan.
Cook chicken in pan until each side of the chicken begins showing colour. While the chicken is cooking you can begin to prepare a casserole dish for the chicken coated in marinera. Begin by spreading a layer of Marinara on the bottom of the dish and then add the chicken. Spoon a little more Marinara on the chicken if desired and then bake in oven for 20-30 min at 350. Continue to check on the chicken to avoid overcooking.
Tips
  • Classic chicken parm includes mozzarella however I chose to make this recipe without it. Feel free to add more cheese such as mozzarella slices to your chicken prior to baking in the oven. It is always fun to experiment and add your own twist to it!
  • This dish can be served on its own but is best when paired with pasta!
