MASHED TURNIPS WITH BACON RECIPE

While I am on a low carb diet, I do love mashed dishes for sides. But, I do not eat potatoes so I wanted to find an alternative to mashed potatoes. This mashed turnips is a great option and is super yummy. Follow along and check it out! It's great for any dinner from Thanksgiving to every day meals.

Cut up turnips into 1 inch pieces. The smaller the better.

Add turnips to water and cook until tender.

Strain them and then add them back to the saucepan and mash.

Mix with cream and other ingredients and mash some more.

Mix in Chives and bacon and stir. Serve immediately.

This is the finished product. Would you try it? Note it does not taste like mashed potatoes. It tastes a little like mashed cauliflower but has it's own flavor.

Ingredients

  • 1 LB of turnips - cleaned, peeled, and cut into small cubes
  • cup heavy cream
  • 2 tbsp cream cheese
  • 2 tbsp sour cream
  • 2 tbsp minced chives
  • 1 tsp Himalayan salt
  • tsp pepper (black) coarse
  • 8 pieces of bacon strips
  • 1 tsp of granulated garlic
  • 1 tbsp of butter
Instructions

Cook bacon in an air fryer or in the oven. The air fryer cooked it within 10 minutes. In the oven, it will take 20 minutes. Make sure the bacon is cooked before starting the rest of the dish.
Cut the turnips and peel them. Cut them into small cubes for quick cooking. Place them into a large saucepan and bring to a boil. Cook for about 20-30 minutes or until you can mash a cube with your fork.
Meanwhile, cut the cooked bacon into pieces. Measure out the rest of the ingredients. For the heavy cream, measure out of a cup but note you may not use it all-measure two tablespoons of cream cheese and 2 tablespoons of sour cream. Mince the chives and place them in a small bowl. Measure out 1 tsp of salt and tsp of pepper. I used coarse pepper, but you can use the ground if you want. Reduce the ground pepper quantity to tsp.
Drain the cooked turnips after they are finished and place them back into the saucepan where it was cooking. Put the heat on low. Then, add the cream cheese, sour cream, salt and pepper, and as much of the heavy cream you feel is needed. Mash the turnips. It will not be creamy like mashed potatoes, it will look more like mashed cauliflower. If you want it smoother, you could try an emulsion blender. NOTE: Taste it, if it tastes bitter to you, add 1 tsp of granulated garlic and 1 tbsp of butter and mix. It will take out the bitterness.
Add the crumbles of bacon to the turnip mash. Then, add the chives. Mix well. Serve immediately.
Tips
  • NOTE: TASTE IT, IF IT TASTES BITTER TO YOU, ADD 1 TSP OF GRANULATED GARLIC AND 1 TBSP OF BUTTER AND MIX. IT WILL TAKE OUT THE BITTERNESS.
  • Because it separates like mashed cauliflower when it cools, you may want to make it at the last minute.
