This recipe is very versatile, you can also use chicken, beef or other kind of fish fillets with your favourite seasonal vegetables. Ingredients
For teriyaki salmon
  • 2 salmon fillets, cubed
  • 1 tbsp vegetable oil
teriyaki sauce
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp minced garlic
  • 1/3 cup water
For stir fry noodles
  • 300g dry rice noodles
  • 1 tbsp vegetable oil
  • 2 cloves of garlic, minced
  • 1 broccoli, cut in florets
  • 2 cups wombok
  • 1 carrot, thinly sliced
  • salt and pepper to taste (optional)
Instructions

In a small bowl, add soy sauce, honey, minced garlic and water. Whisk well.
Cut salmon fillets into cubes and marinade with the sauce. Set aside for 15 minutes while preparing the noodles ingredients.
Bring water in a pot to boil, add dry noodles and cook according to packet instructions.
Wash and cut all the vegetables for the meantime.
Heat up vegetable oil in a wok, add garlic, broccoli, wombok and carrot. Stir fry and cook on high heat for 3-5 minutes until vegetables are soft or at your desire textures.
Drain cooked noodles using a strainer. Rinse with cold water immediately if you are not ready to use them straightaway.
Add cooked noodles into the vegetables mixture, stir well to combine. Cover with lid while you cook the salmon.
In a pan, add 1 tbsp of vegetable oil. When the oil is hot, add marinaded salmon (keep the sauce in the bowl) into the pan. Cook and pan seared the fish 1 minute on each side until they are slightly brown. Cook for 4 minutes in total until salmon are sealed and lightly charred.
Add the marinade sauce into the pan and cook for one minute until the sauce is thicken. Remove salmon from the pan and place them on a plate cover with foil if not serving straightaway.
Add thicken teriyaki sauce into the noodles mixture and toss well. Transfer noodles to a serving plate and top with salmon. Serve immediately.
