A fabulous weeknight meal is always good to have in your back pocket. The meal that takes a few minutes to prepare, but tastes like you have been slaving all day in the kitchen. This is it my friends.

Easy teriyaki meatballs with ramen noodles. The sauce on the ramen takes a minute- no joke, and the teriyaki sauce is from a bottle- sometimes making things from scratch is not worth it. I am totally obsessed with ramen noodles, which pair perfectly with these meatballs. I also happened to use an extra secret ingredient. Everything bagel seasoning, I know, totally not an Asian spice, but with the sesame and the garlic and the onion flakes, it just gives it the perfect flavour.

This perfect weeknight meal is definitely worth gossiping about!

Ingredients
For the Meatballs
  • 1 lb lean ground beef
  • 1/2 large onion, grated
  • 1 tsp oil
  • 1/2 tsp garlic powder
  • 1 tbsp teriyaki sauce
  • Salt/Pepper, to taste
For the Ramen Noodles
  • 2 pkgs dry ramen, cooked
  • 1/4 cup soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 2 tsp everything bagel seasoning
  • 1/4 tsp red pepper flakes (optional)
Instructions

In a large bowl, mix together all meatball ingredients (excluding the extra teriyaki sauce) until incorporated. Roll the meatballs and place on a greased baking tray.
Bake meatballs in a 350-degree oven for 10 minutes. Open oven, turn meatballs over and bake an additional 5 minutes. Remove meatballs from oven and coat in the teriyaki sauce. Place back in oven for 10 more minutes. Remove from oven and brush with more teriyaki sauce. Set aside.
Meanwhile, in a large pot on medium heat, mix together soy sauce, sesame oil, rice wine vinegar and the seasonings. Let simmer for a few minutes. Add in the cooked ramen and coat with the sauce. Leave ramen noodles on low for another 5 minutes.
Serve ramen with meatballs and sprinkle dish with sesame seeds and scallions. Serve with broccoli. Enjoy!
Tips
  • Use bottled teriyaki sauce for an easy weeknight meal!
  • You can purchase ramen from soup mix and throw out the soup packet.
