I love to experiment with whatever I have in the fridge. And when the kids ask for a sandwich I love to try new things.

Meet the BEAST ( bacon egg arugula spinach tomato). Nothing here is new, the idea is to show you that you can combine ingredients you might already have in your fridge for an awesome sandwich because let’s be honest, who has time for boring sandwiches.

The ingredients are easy

  • eggs
  • bacon
  • tomato
  • spinach
  • arugula
  • bread
  • mayo
  • salad dressing

Make sure to cook your bacon. Don’t overcook bacon. Keep your heat on medium so it won’t burn.

Here are the eggs for this sandwich. I made it into a little pocket. I wanted an omelette type of egg for this one.

This is no doubt that this is the best sandwich we've made.

How to build this masterpiece

Cook your bacon on medium heat. Don’t burn it. You want it crispy but not burnt.
Cook the beaten eggs like an omelet. Fold to properly fit your bread
Spread mayo on both slices of bread
Season the arugula and spinach with your favorite salad dressing. Sprinkle salt on the tomato.
Build the sandwich in any order
ENJOY

Tips

  • You can use any bread. I like Trader Joe’s artisan bread.
  • You don’t need a cleaver lol. I do because I love it.
