Crockpot Apple Pork Tenderloin

I love the combination of apples and pork. I remember growing up, I would always eat applesauce with my pork chops (anyone else?!) Well since growing up, I have gotten a bit more sophisticated with my pork/apple combination.


This recipe was inspired by Trader Joes Pumpkin Butter. This week, I had a pork tenderloin thawed in the refrigerator, but didn’t know what to do with it until I saw the pumpkin butter in my cabinet and apples in my fridge. Apples + pumpkin butter + pork= yes please! I knew this had to be a winning fall combination!


I was a little hesitant about my “secret” pumpkin butter ingredient, but it turned out great and was a hit with my whole family! The flavors are the perfect combination of sweet, savory, and fall spice.

Ingredients

  • 2 lb pork tenderloin
  • 3 apples (skin on), sliced
  • 2 tbsp. pumpkin butter or apple butter
  • 1 cup low sodium chicken broth
  • 2 tbsp. olive oil
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
Instructions

Heat olive oil in a large skillet over medium heat.
Season pork tenderloin on all sides with garlic powder, onion powder, salt and pepper.
Sear pork tenderloin on all sides for about 2 minutes each side.
Layer sliced apples in bottom of crock pot and top with pork tenderloin.
Whisk pumpkin butter and chicken stock in small sauce pan over low heat until combined. Pour over pork.
Cook on low for 6 hours.
Shred pork tenderloin and pour apples and sauce on top.
