Pumpkin Churros Waffle

Do you love churros but hate frying food in your home kitchen? If so, this recipe is perfect for you! This recipe is based on Serious Eats' waffle iron churros recipe. To celebrate National Pumpkin Month, I've given the recipe a pumpkin twist!

These waffles are so fluffy and perfectly crunchy! It quickly became my favourite waffles recipe. If the waffles have become soft after it has been sitting out for awhile, you can crisp it back up by putting it in an air fryer at 400°F for 5 minutes.

The perfect toppings to me for churros are chocolate sauce and cinnamon sugar. Because of the nooks and crannies of these waffled churros, they are the perfect vessel to deliver these delicious toppings into your mouth!

Churros

In a saucepan over medium heat, bring water, butter, pumpkin puree, salt, sugar and cinnamon to a boil.
Lower the heat to medium. Add flour and stir with a spatula rapidly until it forms a coherent dough and no dry lumps of flour and excess water are present. Continue to cook and stir for 1 minute, then take the saucepan off heat. Allow the mixture to cool slightly for 5 minutes.
Add eggs one at a time to the batter, stir until each egg is fully incorporated. The batter is now ready to be cooked in a waffle iron.
Oil and preheat the waffle iron to medium heat. Place about 1/4 cup of batter in the waffle iron. Cook until the waffle is golden brown, about 5 minutes.
When the first batch of waffles are cooking in the waffle iron, prepare the cinnamon sugar. Simply mix the sugar and ground cinnamon in a bowl.
Once the waffles are cooked, dip and coat the waffles with cinnamon sugar.

Chocolate sauce

In a microwave, heat the cream and chocolate until the chocolate is melted (you can check the chocolate consistency during the microwave process by stirring the chocolate and cream), about 20-30 seconds. Alternatively, you can make the chocolate sauce in a saucepan by mixing the two ingredients and cooking them over low heat. Once the all the chocolate has melted, it is ready to be served.

Tips

  • While different waffle irons cook waffles differently, you may have to adjust the cooking time and heat setting to your liking.
  • To adjust the chocolate sauce consistency, you can thin out the sauce by adding more cream, or thicken the sauce by adding more chocolate.
