Bringing a pop if colour into your weekend friends and a very healthy and delicious salad to your table. What I love about this salad is the contrast between sweet, spicy, tangy and crunchy. This is an Crunchy Asian Slaw with Mango which I made recently. This dish can stand alone as an entree by adding some cooked protein like chicken or shrimp, even some cold vermicelli noodles or serve it as a side dish as I have here. This dish can also be used as a topper for fish or chicken tacos. No matter how you decide to use this crunchy asian slaw, it is the base for a delicious meal.

Ingredients

  • * 1 bag shredded cabbage
  • * 2 cups shredded red cabbage
  • * 1 cup carrots , julienned
  • * 3 green onions , finely sliced on the diagonal
  • * 2 chopped zucchini
  • * 2 large mangos diced
  • * 1 cup toasted sunflower seeds
  • * 1 cup toasted pumpkin seeds
  • * 1/2 cup toasted sesame seeds
  • * 1/2 cup hemp seeds
  • * 1 Tbsp cilantro leaves for garnish
ASIAN DRESSING
  • * 3 tbsp rice vinegar
  • * 3 1/2 tbsp soy sauce
  • * 2 tbsp lime juice
  • * 3 tbsp Sesame oil
  • * 1 1/2 Tbsp mirin
  • * 1/2 tsp finely minced red chilli
  • * 2 garlic cloves , minced
  • 2 tsp shredded ginger
Instructions

* Combine the dressing ingredients in a jar and shake well.
* Combine the salad ingredients.
* Pour over dressing and toss to combine.
* Garnish with cilantro
