Instant Pot Vanilla Extract

Vanilla extract can take 6 weeks to make, but you can make it in two hours with an Instant Pot pressure cooker.

I made both vodka and bourbon vanilla extract. I use the vodka vanilla more, so I made 4 cups of that and 2 cups of bourbon vanilla. Click over to my Instant Pot Vanilla Extract post for the printable labels.

This is a rich and beautiful color after just two hours. The extract will smell strongly of alcohol for the first week. You can use it right away, but it's best to let it sit for a week if the smell bothers you.

I made three pint jars in my 6 quart Instant Pot.

Leave the vanilla beans in the jar and add more vodka or bourbon as needed to keep your extract going.

Ingredients

  • 6 vanilla beans
  • 6 cups vodka or bourbon
Instructions

Cut each vanilla bean in half lengthwise. This helps extract more flavor from each bean. I also cut each bean in half so they would fit inside the jars.
Place two cups of alcohol and two vanilla beans in each pint jar. Add a ring and lid just so they don't spill in the pressure cooker.
Add 1 cup of water to the inner pot. Place the trivet inside and set the jars on the trivet.
Pressure cook on high for 60 minutes. When it's done, turn it off and let it naturally release for 60 minutes.
Make sure the pressure has all been released. Open the lid. You can use jar lifters to move them to a heat proof surface to cool or let them cool in the Instant Pot. The jars will be extremely hot! Do not touch them until they have cooled.
