Homemade dark chocolate peanut butter cups with 4 ingredients and none of the garbage you get from store-bought brands. They’re rich and creamy, dark and decadent and have no refined sugar.



This blog is being interrupted by the Emergency Broadcast System and the super annoying sound the television makes when the alert is issued. Usually it’s just a system test trying my patience but today it’s a bonafide state of emergency. I probably should be rushing to the grocery store to hoard loaves of bread and bottled water but I’d rather stay home and write this post.


After 15 years of living in the sunshine state, I barely flinch when a hurricane is headed this way. That’s even with having to evacuate three out of three of the last years. With my cat.


Side note: If you haven’t been stuck in mass exodus traffic with a cat meowing nonstop you haven’t lived.


Hurricane Isaias, which I can’t pronounce correctly despite studying Spanish for four years, isn’t expected to be a direct hit so we’ll be hunkering down instead of running like hell. Riding out the storm means preparing for possible flooding and +75 mph winds. That’s always fun, I say with heavy sarcasm. It starts with piling all our patio furniture in the living room so it doesn’t take flight, draining a foot of water from the pool so it doesn’t overflow and chopping coconuts off our palm trees so they don’t become flying missiles.


Supposedly coconuts kill more people a year than sharks.


The whole situation is a recipe for disaster, which got me thinking: what is the opposite of a recipe for disaster? The answer I came up with is this recipe for homemade peanut butter cups.


My favorite candy bar of all time is the Reese’s Peanut Butter Cup. I’d hate to know how many hundreds I’ve eaten in my life but I’ve eaten each one exactly the same way. First I nibble all the way around the chocolaty edges then finish off the creamy middle in one final, yummy bite. They’re so damn good, but homemade ones are way better.


I dare to say you’ll never want store-bought peanut butter cups again after making your own. They’re so simple to throw together, just four ingredients and a freezer until you taste one of the best things you’ve ever put in your mouth.

Dark Chocolate Peanut Butter Cups

Ingredients

  • 12 ounces 72% cacao dark chocolate divided
  • 3 tsp melted coconut oil divided
  • 1/2 cup creamy peanut butter natural
  • pinch sea salt fine
Instructions

Add liners to a standard cupcake pan
Chop 6 ounces of dark chocolate into small pieces. Add 1 tsp of melted coconut oil.
Microwave in 30 second intervals, stirring between each until melted.
Add melted chocolate to cupcake liners and brush up the sides to coat evenly.
Freeze to set.
Mix 1 tsp coconut oil with peanut butter and drop onto frozen chocolate with a teaspoon until evenly distributed.
Freeze to set.
Melt remaining dark chocolate with 1 tsp of coconut oil. Top peanut butter in even layer.
Freeze for 5 minutes
Add a pinch of sea salt to the tops of each peanut butter cup
Freeze until set.
Soften peanut butter cups at room temperature for 15-20 minutes before eating.
Tips
  • Use an all-natural creamy peanut butter. Using processed peanut butter defeats the purpose of making these at home. There’s a lot of garbage ingredients in off-the-shelf candy bars and we’re aiming to keep it as healthy as possible here.
  • I used three bars of Ghirardelli 72% Cacao Dark Chocolate in this recipe. Dark chocolate is high in antioxidants and lower in sugar than milk chocolate. Plus it just tastes better in my opinion. If 72% is too overpowering for your taste, tone it down to 60% cacao.
  • Coconut oil needs to be at room temperature. It’s included in the recipe to help the chocolate and peanut butter set up properly.

  • First off I want to commend you on your funny story telling skills ! They are great I actually laughed outloud a few times reading your story about the meowing cat which I know personally about as I have 3 and when taking them to get their rabies shot every year and the 30 min trip there is fun indeed with the nonstop meowing and then your funny but sad hurricane stories and most of all the killing coconuts !! oh and by the way I love peanut butter cups and have made some too a few times but I have found a great recipe you can try as well and its to add a little cream cheese to your peanutbutter and some stevia as I like mine a little sweeter and then fill the frozen chocolate cups with that mixture its pretty darn good too ! have a blessed day in Sunny Fl !

      for Me, adding cream cheese to the PB would take away from the “healthier” version the recipe presents… a little Stevia might be good, however!
