Dak bulgogi (chicken bulgogi) is an easy spicy chicken recipe you need to have in your arsenal. Spicy, sweet, and tangy, this goes on rice, quesadillas, pizzas, pretty much on everything you can think of!


I used boneless, skinless chicken thighs. You can use breasts too but whatever you do, make sure you don’t have the bones. Also, let it marinate for at least an hour.


I love this dak bulgogi recipe because it is very versatile. I recommend playing around with the sauce and keep tasting it until you like it. I don’t like super sweet things so I cut down on the sugar and upped the gochugaru but you may want to add a smidgen more sugar and less gochugaru. I find gochujang made for a wider audience is sweeter. So if you’re getting yours from a non-Korean grocery store, I’d cut down on the sugar a lot and adjust to taste.

Ingredients

  • 1 lb boneless, skinless chicken thighs, cubed
  • 1 tsp sugar can use honey
  • 1 tbsp rice vinegar also can use white distilled vinegar
  • 1/2 tsp garlic powder
  • 2 tsp gochugaru
  • 1 tbsp gochujang
  • 1 cup sliced bell pepper
  • 1 cup sliced onion
  • soy sauce to taste
  • oil enough to drizzle a frying pan.
Instructions

In a small bowl, mix gochujang, sugar, vinegar, garlic powder, gochugaru. Add small amounts of soy sauce, to taste
In a large bowl, Add chicken, sliced onions and peppers and add sauce. Make sure the chicken is well coated in the sauce. Let it marinate for at least an hour to overnight in the fridge.
When you are ready to cook, set a non stick frying pan on low heat with a drizzle of oil. Pour in the chicken mixture and let it cook, about 15 minutes.
