This banana bread is classic and delicious

I add some dark chocolate , honey and some powered sugar for extra deliciousness.

This recipe is non dairy!

You can substitute the coconut oil for butter

and the soy milk for regular milk of course.

but trust me, make it like this and you won’t regret it!

Ingredients

  • 8 tablespoons coconut oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup soy milk
  • 1 teaspoon vanilla extract
  • 3 bananas very ripe
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoon cinnamon (optional but recommended)
  • 1/2 cup chocolate chips
  • 1 tablespoon honey for finishing after cake is cooled
  • Powered sugar for finishing after cooled
Instructions

Heat the oven to 350 degrees Arrange a 8X5 inch loaf pan ( if non stick you don’t need any spray, and if not line the pan with cooking spray)
Make sure the coconut oil is melted and at room temperature. Mix the oil with the sugar and whisk until combined we’ll.
Add eggs and whisk until the mixture is smooth Then add the milk and the vanilla
Mash the bananas into the batter And leave some chunks. That is what makes banana bread tasty.
Add the flour, baking soda, salt, and cinnamon Into a separate bowl and slowly add the mixture into the banana mixture Once fully combined, fold in chocolate chips ( you can choose to use bitter dark chocolate, milk chocolate or semi sweet) If you choose to add chopped nuts now is your time as well.
Pour the batter into the loaf pan Smooth the top of cake so it is sitting straight
Bake for 35-45 minutes until you see the gorgeous yellow opening of the bananas and the dark browning of the cake I would recommend checking the cake after 30 minutes and then every 5 minutes after that. Once you can stick a cake tester or small knife without batter sticking to it, the cake is ready to come out.
Cool the cake for about 45 minutes to 1 hour
Remove from the loaf pan Finish the cake with powered sugar And lastly drizzle honey 🍯

    This looks great! I'm going to substitute GF flour and hope its just as delicious. Since I usually like everything you make, I assume it will taste as good as it looks!
