We love green chile around here. I cook with it often, incorporating it into as many meals as I can . While we have a old family recipe for Green Chile Stew, it calls for pork stew meat, cooked twice, rinsed and then simmered low and slow, so we save that for weekends and special occasions. This is a quick version, using ground beef, and is perfect for a weeknight, or any time you need a fast meal!

- Cook Hamburger with diced onion and seasonings until no longer pink.
- When meat is done and onions are soft, do not discard grease.
- Add flour, stirring 2-3 minutes until flour begins to brown.
- Add enough warm water to cover meat mixture.
- Add canned tomatoes, diced green chile, potatoes, and beans. You may need to add more water until the thickness is to your liking. Test seasonings again.
- Simmer on low heat about 30 minutes, until potatoes are fork tender.
- Using a potato masher, I like to mash a few of the potatoes to create more texture at this point.
- Also , if your stew is not the consistency you desire, you can add a simple roux of warm water and flour to thicken further.
- Serve with sour cream, cheese, and a warm flour tortilla!
Tips
- We keep roasted green chile in our freezer at all times, but you can roast fresh Hatch or Anaheim chiles on your grill or over the stove, or use canned green chile instead. Also, test the heat of your chiles if that is an issue for you and adjust the amount accordingly. ( We never do this, and have made some super hot batches!!🤪)
