Apple Cinnamon French Toast

Fall is here and it is Apple season!

this recipe uses warm spiced apples as a topper for this protein packed French toast.

Instead of an egg, I use silken tofu. If you’ve never used tofu, there are different forms, and silken tofu is, in my opinion, the easiest kind to use.

it is tasteless and odorless, and when blended, it becomes creamy. It will take on the taste of whatever you put with it, which in this case is cinnamon, vanilla and maple syrup.

If you’ve never tried it before, give it a go. I promise you’ll never miss the egg and may even have found a new favorite way to make French toast!

Make the apple topping ahead and keep warm while you are making the French toast.

Don’t want Apple topping? Blueberries work great with this recipe too!

You can use different types of bread, like Italian or sourdough.

Ingredients
Apple Cinnamon French Toast
  • 1/4 cup silken tofu
  • 1 teaspoon cinnamon
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 3 teaspoons maple syrup
  • I small baguette
Apple topping
  • 2 apples, peeled, cored and cut into small pieces
  • 1 Tablespoon maple syrup
  • Pinch of nutmeg
Instructions
French toast
Slice the baguette the day before to allow the bread to get stale overnight.
Put all ingredients (except the bread) into a blender or processor and purée till smooth. Pour into a shallow dish.
Put the slices of bread into the tofu mixture for several seconds to absorb the batter. Gently shake off any extra and place the slices in a lightly greased pan over medium heat. Cook till golden, then flip over and cook on other side till golden.
Apple topping
Put all ingredients in a medium pan over medI’m heat and sauté till the apples are cooked and the syrup has thickened.
Spoon over French toast.
Tips
  • If your bread isn’t stale, you can put the slices on a baking sheet in a 250 oven for 20 minutes, flipping halfway through. Don’t let them brown though!
  • If your apples aren’t really ripe, you can always boil them in a bit of water till they are tender, then drain the water, add the rest of the ingredients and sauté as directed.
