When I go out to eat, I love to eat Mexican rice. It’s always been one of my favorites!! In fact, if my particular dish doesn’t come with it, then I always order it as a side dish. Nachos just don’t taste right without rice, am I right??

Anyway, Mexican cuisine is a family favorite and I never ever could figure the rice out, no joke!

Ingredients

  • 2 cups Long Grain White Rice, rinsed
  • 1/8-1/4 cup veg. oil
  • 1 heaping tsp minced garlic
  • 1 tsp salt
  • 1 tsp Cajun Seasoning
  • 8 oz. tomato sauce
  • 1 chicken bouillon cube
  • 4 cups water
Instructions

Place chicken bouillon cube in water; heat on stovetop or microwave 4 minutes till hot. Set aside
Rinse Rice, drain as much water as possible
Using Saute function on IP, add veg oil; when hot, add rice. Cook rice until golden brown stirring constantly
When browned, add garlic and seasonings; cook for about 30 seconds, do not burn garlic
Add broth and tomato sauce, stir; Hit cancel to stop saute.
Use Rice selection, 12 minutes.
When done, depressurize immediately and fluff with fork

    I don't have one of those pots. How do I make it the old-fashioned way?

      follow the same recipe, just use a large skillet with lid. Once the rice is browned, add liquids, bring to boil, cover, reduce heat to low, 20 to 30 mins later enjoy.

    4 cups of water is waaaay too much! It should be 2 cups.

      the long grain rice is 1cup of rice to 2 cups of water … the recipe is using 2 cup of rice so it’s right ..
