Let me start off by reassuring you that this isn't an average banana loaf recipe you can look up online, recreate and it will taste just like every other banana loaf recipe out there - this banana loaf is like no other, just another level! It is perfect for as a morning snack to your regular morning coffee and an ideal addition too afternoon tea.

The recipe is flourless and gluten free, which makes it tolerable for those who suffer from gluten intolerance or simply wish not to consume gluten in their diet.

This flourless banana loaf is perfectly moist and chocolatey and I dare say it is absolutely one of my favourite weekend recipes to make! That peanut butter and raw cacao powder combo is the best!

Ingredients

  • 70g porridge oats
  • 3 ripe bananas
  • 45g raw cacao ppowder
  • 2 eggs (or 6 tbsp aquafaba - vegan alternative)
  • 65g peanut butter (either crunchy or smooth)
  • 70g honey (or erythritol)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
Instructions

Preheat the oven to 180C.
Start off by blending oats to obtain a flour-like texture.
In a separate bowl, mash two bananas. Then, add in the rest of the ingredients - blended oats, raw cacao powder, eggs, honey, cinnamon, baking powder as well as baking soda, and mix until the mixture is well-combined.
Bake for 50 minutes or until a toothpick comes out clean.
Tips
  • Swap eggs for aquafaba for a vegan alternative.

      1/3 cup oats

      1/2 cup cacao

      1/4 cup peanut butter

      3.33 Tbs (I think thats 3 TB and 1 t) honey

      356F (I think I'd preheat to 375 and drop it to 350 when popping the loaf into the oven.

    I presume the remaining banana is sliced thin, or in half?, and draped over the top. And then put in the oven for the full 50 mins....?

      Yes, that's correct! So sorry the recipe cut it off! It is the first recipe I posted and had troubles submitting in for some reason! Just slice in in half and put on top - that way the banana will caramelize nicely and give some extra flavour to this loaf.


      It usually takes me around 50 minutes to bake this loaf, however, I would suggest inserting a toothpick to see if it comes out clean.
