Need a quick delicious meal that’s sweet and spicy? These plant based tacos are for you! You can play around with different toppings in your pantry to suit your tastebuds and they can also be made dairy free or vegan with certain substitutions :)

The tortilla recipe can easily be used for pizzas , other wraps , as naan or butter chapati with curries and veggies and is super soft and crispy.

This recipe is a healthy alternative to your normal tacos and honestly taste so so good , you’ll be waiting to make it again!

Ingredients
For the tortilla
  • 1 cup all-purpose flour + 1 tbsp cornstarch
  • 1/4 tsp soda bicarbonate
  • 1/2 tbsp butter
  • Milk or water ( enough to form a soft dough)
  • Salt to taste
Buffalo sauce (If using store bought about 1/2 cup)
  • 2 tbsp butter melted
  • 1/4 cup hot sauce
  • 1 tsp honey or agave
  • 1/2 tsp pepper
  • 1 tsp lemon juice or vinegar
  • Salt to taste
For the cauliflower
  • 1/2 cup flour
  • 1 tbsp cornstarch
  • 1/4 cup milk or water
  • 1/2 tsp red chili powder or paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • Salt to taste
  • Half a head of cauliflower cut into florets
Toppings
  • Some lettuce or rocket leaves
  • Crumbled feta
  • Lemon wedges
  • Ranch for serving
  • You can also add any other toppings like avacado slices , pickled onions etc.
Instructions
Tortilla
Mix together flour, cornstarch, salt and soda bicarbonate.
Add butter and rub in until fully combined
Add milk or water as required while kneading until a smooth dough forms
Cover and let rest for 30 mins
Then roll into medium sized circles that are about 1/2 inch thick
Cook on medium high heat for about 1 minute on each side until very lightly browned at the edges
Cover in a cloth while preparing the filling
For the cauliflower
Mix flour , milk and the rest of the spices to form a thick batter
Add the cauliflower florets and coat evenly
On a grill or pan add enough olive oil to coat the bottom and let it get hot
Add the coated florets until browned and crispy (this can take about 5-7 minutes)
Mix all ingredients for the buffalo sauce in a saucepan and heat on low until simmering
Add the florets to the sauce and mix until evenly distributed
Assembly
On a tortilla place some lettuce or preferred greens, add the cauliflower and other toppings and enjoy with some ranch on the side!
Tips
  • If you are vegan you can use water for the dough and batter and use dairy free butter and cheese
  • If you are running low on time and can’t let the dough rest for 30 mins , leave it for about 10 mins in a warm place.
  • You can always use store bought tortillas and buffalo sauce to make this even easier and quicker!
