It keeps well for a few weeks if you store it in a sealed container in the refrigerator. But my favorite trick for making it last longer, is to pour it into ice cube trays and freeze it, so I can have individual portions for making a quick, fresh and delicious pesto pasta sauce!

Specifically Creme eggs or Caramilk eggs for the most decadent Easter treat ever! I'm a caramel girl through and through but my husband is a Creme Egg lover, so for my cookies I did half Caramilk egg and half Creme egg. Unfortunately, once unwrapped the chocolates are virtually indistinguishable so it was luck of the draw as to whether you'd bite into a Caramilk or a Creme Egg cookie. Pro tip - keep them in separate containers if you are using more than one type of chocolate egg! Do you remember your first Korean BBQ experience at a restaurant? My first experience is ingrained in my memory because of two things. One, my first taste of Korean BBQ was simply amazing. Like wow! All these flavors of sweetness, saltiness, spiciness and smokiness. Two, you don’t realize how much you smell like the food you just ate. And, I don’t know about you but I am always stuffed to the brim when I leave and smelling it on the drive home just drives me nuts - haha. Korean short ribs is one of those things that I often make at home. It’s incredibly easy and the family goes crazy over it. Sure, you can buy a bottle of marinade at the store but it’s so easy to make at home. And, it means you don’t have another bottle taking up space in the fridge. I don’t know about you but I am always trying to make room in my fridge for everything I’m cooking.

Frosted Animal Cookies

Growing up I spent a lot of time visiting my grandmother. When I arrived to her home, she’d have a couple of surprises for me. One surprise was a booklet with paper cut out dolls and clothes and the other surprise were frosted animal crackers/cookies with sprinkles. I loved them and my days spent with her. She’s no longer here but our memories together remain vivid.Now that I’m a grandmother to 4 sweet kids, I want them to have memories of times spent with me and the special treats I make for them. They love cookies, I frequently make mini chocolate chip cookies which they love. However, they’ve never tasted animal cookies because I know now as an adult that they’re full of a lot of bad ingredients, so I decided to make them instead. They not only turned out delicious, they were simple to make and super cute and talk about nostalgic treats 🥰 that’s what these are to me. They bring back lots of great memories.I chose to not use food coloring and instead I used beet powder. No, it didn’t give the cookies a beet flavor either but it sure did give it a lovely color. When I was in culinary school, I was gifted the carrot cake recipe of the grandmother of my boss. And you know what I did...at some point through the years, I lost the recipe. And I have never been able to recreate it. I’ve come close, but I haven’t gotten it just where I want it. I’ll keep trying, but in the meantime, I have several other options for carrot goodies, including these delicious carrot cake cookies!My best friend from my culinary school internship actually provided me with the original recipe for these delicious carrot cake cookies. After a few tweaks, I’ve made them my own, and I love the result. One of my favorite things about these cookies is that they are delicious with or without the icing. I could totally gobble them up on their own! Also, in all seriousness, they are loaded with carrots, pecans, and raisins, so while they are not a go-to healthy option, they are slightly more guilt-free than some other dessert choices.

All you need to make my light, wafer thin crêpes are four simple ingredients. Once you’ve got your crêpe base - it’s all about styling it out with toppings. Savoury ...or sweet? This lovely light batter will work either way. Crêpes are also the perfect opportunity to cut down on food waste and use up all those random bits n’ bobs in the fridge before the weekly grocery shop too.This batter will happily refrigerate for up to 12 hours - a perfect solution to have on hand for making petite crêpes when a snack attack hits!

Traditional Italian Easter Biscuits

These are the biscuits of my childhood and bring so many nice memories to me.At a time when chocolate was a luxury in Italy, these big biscuits made with simple ingredients and boiled eggs were the most traditional treats for big and small during Easter time. Today they are also popular but not as much as in the past being chocolate eggs the treat everyone looks for. However I love to keep traditions alive and pass them over to my kids and that’s why we even did a cook-along about them.These biscuits can be made into different shapes like baskets called “panarieddhru” or bells called “campanaru”. I’ve made them into the traditional basket shape as well as in a more 2021 kids friendly shape like a bunny! They are called “cuddhura cu l’ou” because they are pastries decorated with a hard-boiled egg. The recipe for cuddhura cu l'ou always includes an odd number of decorative hard-boiled eggs; you can prepare just one big one or, like I did, have fun creating different shapes.

Healthier Mascarpone Ricotta Fruit Tartlets

There’s a korean cafe near my house and I’m obsessed with their fruit tarts. Instead of pastry cream, they’re filled with a cheesecake mixture and topped with glistening fruits. Yum! I have some leftover mascarpone and ricotta cheese at home and thought I’d try to make some tarts that inspired by the ones in the cafe. Instead of butter, I have opted to use a light olive oil spread to try and decrease the amount of saturated fats. The problem is it is softer than butter even when cold so it makes the dough harder to handle because it’s stickier. I find chilling it for a few hours beforehand and lightly flouring your hands and counter helps. Be careful not to add too much flour though or your pastry will be tough. To avoid handling it too much, I initially used a potato masher and a spoon to mix the spread with the flour. You can use a pastry cutter or better yet, a food processor if you have them instead (I don’t own either)After transferring the dough into the tartlet tins, I find it helpful to freeze the dough in the tin for half an hour before baking. Depends on how shallow your tins are, you may want to use baking paper and pie weights when blind baking it. My tins are quite shallow so I didn’t find that I need it. However, if you've never tried CBD, I highly recommend that you look into it. It helps a lot with anxiety, and 1 to 2 milliliters can really start to relax you.Just when you think this relaxing, non-alcoholic drink couldn't any get better, it does. It's considered a "Skinny," or low-calorie drink, because I used Sprite Zero in it. Now, I know there are arguments that the fake sweeteners in diet or zero sodas are bad for you, so feel free to swap it out for a lemon/lime sparking water if you'd like to make it a little healthier. Other than that, you're just consuming natural sugars from the blackberries, so this drink has officially been deemed "Guilt Free."

Berry Sangria Cake

Probably over a year ago now, I made a Sangria-inspired cake. I was super-proud of it at the time, but I used cake mixes for the cake layers, tried to use a mirror glaze for the drip (fortunately it was a bit too cold to run like mirror glaze is supposed to; only reason it worked as a drip! :/ ) and just felt like the whole thing could use a do-over.I also learned that scratch layers gave a much better sangria flavor than starting with boxed mixes, so while you can do either I do recommend the recipe below!If you're feeling adventurous and want to tackle a two-tiered version of the same cake, you can find that recipe here!

Mushroom Stuffed Meatloaf

This is a classic meal with a twist. My beef meatloaf is stuffed with mushrooms and spinach and is prepared in a red wine and Dijon sauce. I used lots of fresh herbs and garlic. It was truly delicious. The recipe below is also Passover friendly if you substitute Matzoh meal for the breadcrumbs. You can use any kind of mushrooms, but I used sliced cremini mushrooms. One bonus that was really yummy was that the crust on the outside of the loaf got crispy so that the best part of the meatloaf is the end pieces. I hope you enjoy this recipe as much as our family did eating it.

Kadhi Pakoda is a traditional Indian cuisine. It’s quite popular all over India. Each region has its own recipe; for example Punjabi Kadhi, Gujrati Kadhi, Bihari style Kadhi and more. Here I am sharing my Mom’s recipe with a little twist.There are two elements in Kadhi Pakoda. First is Kadhi, which is a curry made from yogurt, besan/gram chickpea flour and spices. Second is Pakoda/ Fritters. These are made of gram chickpea flour.The twist in following recipe is that I added Spinach to Kadhi. In fritters, I added kale, spinach, spring onion, onion and cilantro leaves. These fritters were so good that they vanished soon after I took them out 😂 so I made another batch.Do try this recipe and let me know your feedback. It’s tastes amazing with rice.
