This soup is so delicious and easy and literally takes just a few minutes to prepare. It's also very cheesy, which is always a good thing right?! And all you need is a Mad Dash mix of this cheesy chicken enchilada soup and just a few other minimal ingredients, and you are all set to go! This is the perfect quick weeknight meal. Especially for when the night's start to turn a little chilly and you can feel fall in the air!

Everything you need for this easy recipe!
Combine your mix with 1 15 oz can of tomato sauce, 1 cup of cold water, 4 cups of whole milk, and chicken. Also, add in your corn and black beans here if you want to use them as well. I did, and I think it was a delicious touch and made the soup more filling!


Bring the ingredients up to a boil. Reduce heat to low and let simmer for 15 minutes.


Then, add 1 cup of Mexican Blend shredded cheese.


Stir soup together until the cheese is completely melted.

Serve and enjoy! Also, be sure to top it with your favorite enchilada toppings. I added some crushed up tortilla chips and a little bit of extra cheese to mine and it was super delicious. But, you could even add some avocado or sour cream if you like. I love how the mix is just your base and you can be as creative as you want to be when fixing this meal.

Ingredients

  • 1 Package of Mad Dash Cheesy Enchilada Soup
  • 1 15 oz can of tomato sauce
  • 1 cup cold water
  • 4 cups whole milk
  • Canned or rotisserie chicken
  • 1 cup Mexican blend shredded cheese
  • 1 15 oz can of corn (optional)
  • 1 15 oz can of black beans, drained and rinsed (optional)
  • Crushed tortilla chips for topping (optional)

Tips
  • You can substitute for whatever milk you have on hand for this recipe. I did not have whole milk so I just 1% instead and it turned out just fine!
