The fluffy eggs, sharp cheddar, and caramelized onions seem so simple but on soft brioche buns, it is a treat to start your morning right!


While making caramelized onions without shortcuts takes some time, the extra sweet and umami flavor really makes it so worth it. You can make caramelized onions ahead of time and keep it in the fridge until it's ready.


The morning of, this will come together in no time for a luxurious brunch. All you need to do is make the eggs and put it all together!


The swipe of dijon and pinch of cayenne in the super fluffy scrambled eggs make this French inspired. As to the fluffy eggs, the key here is cooking the eggs low and slow with constant stirring.

Ingredients
Caramelized onions
  • 1 onion, diced
  • 1 tbsp olive oil
  • 1 tsp butter
  • 2 cups water
Scrambled Eggs
  • 4 eggs
  • 4 tbsp half and half
  • 3 tbsp water
  • pinch of salt
  • pinch of cayenne
  • butter, enough to coat the non-stick pan
Sandwich
  • 2 slices of sharp cheddar cheese
  • dijon mustard, enough to spread it on one side of bun
  • 2 brioche buns
Instructions
Caramelized onions
Get a heavy bottomed pan and set it on the lowest setting you have. Add 1 tbsp olive oil and 1 tsp of butter. Once the pan is coated with the oil, add the chopped onion.
For the next 45 minutes, stir the onion every few minutes. When it starts to stick, add water by tablespoons and stir. You may end up using more than 2 cups of water. That is okay, make sure the onion doesn't start to stick and burn. It is done once the onion is nicely browned with a tiny bit of liquid. See the photo. Once it's done, turn off the heat.
Put the caramelized onions into a container and put it in fridge. It is good to use when you are ready to make the sandwich.
Fluffy eggs
Crack 4 eggs into a bowl. Add 4 tbsp half and half and 3 tbsp water. Whisk very very well, until all the stringy bits are gone.
Set a nonstick pan on the stove. Turn the stove on to the lowest setting you have. Stir once every few minutes.
Once it starts to cook, it will go fast. Keep stirring, making sure to scrape the bottom of the pan so the bottom doesn't burn. Turn off the heat when the egg is firm but still wet. It'll cook on its own.
Assembling the sandwich
Add cheddar, eggs, and put caramelized onions on top. Swipe dijon on one of the bun halves. You are done and enjoy!
