Banana Bread Cookies

This banana bread cookie recipe takes the best parts of banana bread and combines it with the best parts of a chocolate chip cookie! The outside is crunchy and chewy from the brown sugar and the inside is a soft fragrant banana bread that you know and love.


Some of you may have banana bread fatigue after the banana bread pandemonium of the pandemic. But stick with me here. This cookie really elevates the classic banana bread and makes it more indulgent!


I used one medium sized banana and found the dough to be a tad wet when working with the dough after its rest in the fridge, so don’t fret if it is too wet for you!

Ingredients


  • 1/2 cup butter, room temperature
  • 1 banana, mashed
  • 1/3 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/2 cup all purpose flour
  • 1 tbsp corn starch
  • 1/2 tsp salt
  • 1/2 cup chocolate chips
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder

Instructions


In a bowl, add the flour, corn starch, salt, baking powder, baking soda, cinnamon, and chocolate chips. Mix them and set it aside.
In a stand mixer on medium speed, cream the butter with the brown sugar and white sugar, until it becomes fluffy.
Add in the mashed banana, until the banana is well incorporated. You will see that the mixture seems moist as the banana gets mixed.
Add in the flour mixture to the butter mixture. You may fold by hand using a rubber spatula or mix on low until the chocolate chips are just barely incorporated. Be careful not to overmix!
Take the dough and shape in a log and wrap in plastic or wax paper. Put in fridge for at least an hour to overnight. You can freeze it up to 3 months! Just take it out and let it defrost in the fridge before baking.
When you are ready to bake, preheat oven of 375 degrees.
From the log, break off about 2 tbsp of dough and roll into balls.
Place the dough balls about 3 inches apart and bake for 18-22 minutes, until the outside is golden brown and crispy.
