Steamed Pork Dumplings

Steamed or fried, I could eat a dozen or more of these bad boys in a single sitting. They are definitely a guilty pleasure of mine. It has always been a go-to of mine to order them out at a restaurant. But for my birthday this past year my best friend gave me a bamboo dumpling steamer and it was a game changer. Phillip and I couldn’t stop making dumplings and these Steamed Pork Dumplings have been our favorites!


When I was first gifted the bamboo dumpling steamer, I have to admit I was quite intimidated. I had never used one before and was not sure how to use it. What pot do I sit this on? How long do I cook the dumplings for? Do I cook it longer if I have both racks of dumplings cooking at the same time? Well, how could you find these answers out? Try. Try. And continue to try. Also Google and Pinterest helped A LOT.


Once, I got the hang of it I was making dumplings at record pace. We used one of these  dumpling makers but I have to say, hand pinching was the way to go. Phillip has become very creative in the styles that he makes dumplings. But as long as they steam well, I can care less how they look.


We’ll have to start sharing more dumpling recipes we make with our bamboo steamer. Also, so new dipping sauces for the dumplings. Let’s be real, it’s all about the sauce. Soak the dumpling first or even smarter pinch the dumpling so it fills with sauce before eating. Tricks of the trade from two dumpling conasaurs. Maybe even changing up the water or broth we steam the dumplings over…. just a thought.

Ingredients

  • 1 package wonton wrappers
Pork Filling
  • 1 lb pork sausage
  • 1 tsp black pepper
  • 2 tsp salt
  • 1 tsp sugar
  • 1 tsp ginger fresh grated or powdered
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 clove garlic finely chopped
  • 1 carrot peeled & chopped
  • ½ cup red or green cabbage finely chopped
  • 2 green onions finely chopped
Dipping Sauce
  • 4 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp hot chili oil
  • 1 pinch ginger freshly grated or powdered
  • 1 clove garlic finely chopped
  • 1 pinch sesame seeds
  • 1 green onion finely chopped
Instructions

Mix all pork filling ingredients together well
Before making the dumplings add water to pot and put in heat to bring to a boil
Add roughly a tablespoon of filling to a wanton wrapper
Brush edges of the wrapper with water and pinch closed so no filling can escape
In bamboo steamer place cheese cloth down on the rack and place dumplings on top of the cheese cloth
Put bamboo steamer on top of the pot with boiling water and add the bamboo steamer top to keep the steam in to cook the dumplings
Cook for 15 minutes
While dumplings are cooking mix all of the dipping sauce ingredients together and let chill in the fridge for 10 minutes
Turn the head off of the stove and remove the top of the steamer (do not remove the steamer from the pot, it will make the dumplings more difficult to remove from the cheese cloth)
Remove the dumplings from the cheese cloth and serve with green onion and the dumpling dipping sauce
