With the weather changing I feel the need to make guacamole more than the normal 2-3 times a month. Guacamole has to be one of the best recipe inventions ever created. Avocado toast is pretty good, but guacamole is out of this world. Who cares if its extra at Chipotle? It is very well worth it. But what is better than paying the extra at Chipotle? Making it for yourself at home and enjoying it every. single. day. Make it for yourself and put it on everything!


This recipe makes a decent size batch. This can be made as an appetizer to bring to a summer party or to have on taco Tuesday. It is a crowd favorite at barbecues in the summer. We like to make guacamole as a snack on the weekends or for our  Burrito Bowls. The next day we use the leftovers with breakfast. Guacamole is the perfect addition to eggs or put on toast. Think, avocado toast on steroids.


Normally, I just mix everything well with a spoon, but I so badly want a  Mortar and Pestle. So if any of my family or friends are reading *cough* *cough*, it’s now on my Amazon wishlist. But whatever you have to mix these ingredients up will do. I personally like to make guacamole with the avocado still a little chunky but that is just my preference. If you prefer to have the avocado smooth, my suggest is do that first before adding the other ingredients into the bowl. Make sure to squirt some lime juice on top before storing in an airtight container to limit browning.


So, with this recipe I hope you save your extra charge at Chipotle and make it for yourself at home! It is really quite simple and guaranteed so much better. Plus who doesn’t love avocado toast or should I say guacamole toast the next day?

Ingredients

  • 3 avocados
  • ½ cup red onion chopped
  • ¼ cup tomatoes with seeds removed and chopped
  • ½ jalapeno chopped
  • 3 cloves garlic minced
  • ¼ cup cilantro chopped
  • 1 lime
  • 1 tsp salt
  • 1 tsp pepper
Instructions

Chop all veggies and add to a mixing bowl
Scoop in avocados and bring to mix
Add salt, pepper, and squeeze the lime juice into bowl
Mix until your desired chunkiness

    This has been my go to recipe for years and years for company pot lucks, which sadly, I'm not sure we'll ever see again. I usually cheat and buy mild store bought pico de gallo and add a tablespoon or two of mayo to add additional creaminess and volume. Always better the next day when all the flavors meld.

  • Excellent recipe! My version is slightly different. However I kick it up or down whether I am feeding the young kids to the hard core pepper lovers and mark each so no one gets hurt. Some like avocados, cilantro, lime and salt, some dont care for garlic. No matter just make what your crew likes. Living down the road from commercial avocado and citrus growers, it's easy to have avocados year round. Is there ever a bad day for guacamole? I think not!
