If you love banana oat muffins as much as I do then you do not want to miss this recipe. These picture perfect muffins are extra healthy made with simple basic ingredients. Not only are they made from simple real foods but they are also naturally sweetened from the bananas and coconut sugar, no refined sugar over here!! Just the good stuff. All natural and not too sweet.


The star of the muffin is the gooey crumble topping made with oats, almond butter, cinnamon and coconut sugar. It’s a party in your mouth!


My favorite way to eat a banana oat muffin is crumbled on top of a yogurt bowl. Delish!

And the best part is that these muffins are packed with healthy fats, protein and carbs/fiber. A win win!!

Ingredients
For the muffin base
  • 2 cup banana
  • 2 eggs
  • 3 tbsp coconut sugar
  • 1 tsp vanilla
  • 1/4 cup almond butter
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp tsp cinnamon
  • 1 cup rolled oats flour
  • 1/2 cup rolled oats
Crumble Oats Topping
  • 1/2 cup rolled oats
  • 1/3 cup coconut sugar
  • 1 tsp cinnamon
  • 1/3 cup almond butter
Instructions

Preheat oven to 350F, line a 12 muffin pan with muffin liner or coat with butter.
Add banana, eggs, coconut sugar, vanilla and almond butter to bowl and mix well. I like to leave a little bit of the chunky banana for texture.
Add dry ingredients and blend until well combined.
Spoon the batter in between 12 muffins.
To prepare crumble topping add the ingredients in a small bowl. Blend with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle crumble over top of each muffin.
Bake for for 30 minutes or until a wooden pick inserted in center comes out clean.
Remove from oven and let cool for 10 minutes.
Tips
  • Use a coffee grinder or blender to grind down rolled oats into flour.
  • Can swap any nut butter for the almond butter.
  • Store in an air tight container for up to 5-7 days.
