Marcella Hazan Tomato Bisque and Gouda Grilled Cheese

I know what you’re thinking… “Why am I even reading this recipe?”. The answer, this isn’t your momma’s grilled cheese and tomato bisque. This is Marcella Hazan style tomato bisque and gouda and white cheddar grilled cheese. Yeah, put that in your mouth and eat it!


We created the  Marcella Hazan’s Tomato Sauce and thought it was simple, elegant and amazing. So one cold afternoon we decided to make the sauce into a bisque and some grilled cheese. We had just bought Gouda (because its good-a… sorry) and White Cheddar cheese. So we decided to put those in between two sourdough pieces and enjoy that melted cheesy delicious sandwich.


So there’s the recipe for the grilled cheese. Truth be told the Marcella Hazan tomato bisque is very very simple. Take the  tomato sauce we love to make and add heavy cream and parmesan cheese. For the heavy cream just add until it looks like an orange-ish creamy color and for the parmesan cheese, just add until your hearts content. It’s as simple as that!


This meal is fast, easy and perfect for cold days where you need to do a million things and don’t want to spend a fortune eating out. The bisque you can make with very little monitoring. It takes about 30 minutes anyways, just set a timer to check it every five minutes or so. The grilled cheese will take you 5-6 minutes to cook and that’s it. Whoever you make this for will be so happy to have a home cooked meal that tastes delicious and the best part is, you don’t have to sacrifice a lot of time to make it.

Marcella Hazan Tomato Bisque and Gouda Grilled Cheese

Ingredients
Creamy Tomato Bisque
  • 6 heirloom tomatoes
  • 5 tbsp butter
  • ½ white onion
  • 5 cloves garlic crushed
  • 1 tsp crushed red pepper
  • 1 pinch salt
  • 1 cup heavy cream
  • ½ cup parmesan cheese grated
Grilled Cheese
  • 8 slices of gouda or a block sliced
  • 8 slices of white cheddar or a block sliced
  • 1 loaf your favorite bread
  • 3 tbsp butter
  • pinch of salt
Instructions
Gouda and White Cheddar Grilled Cheese
Take the block of gouda and white cheddar cheese and chop up into slices
Coat outsides of bread with butter
Heat skillet on medium heat and add 1-2 tbsp of butter. Sprinkle salt on butter spread on the bread
Once butter melted place bread (butter side down) and places 2 slices of gouda and 2 slices of white cheddar on top of bread
Put top piece of bread (butter side up) on top of the cheese and let sit for a few minutes until bread is browned and crispy
Flip sandwich and wait until bread is browned on the bottom and cheese is melting
If cheese isn't melted yet, lower heat (cover skillet with top if you have one) and wait for cheese to melt
Once cheese is melted to your liking, remove from skillet let sit 1-2 minutes and slice in half to serve
Creamy Tomato Bisque
Slice a thin X on the bottom of each tomato
Add tomatoes to pot of boiling water
After 1 minute remove tomatoes and place in bowl of ice water to cool
Peel and crush heirloom tomatoes
In stock pot add butter, onion, pinch of salt, crushed red pepper, crushed garlic, and crushed tomatoes
Simmer for 45 minutes or until thicken to your liking
Stir every so often and crush tomato chunks
Taste and add salt and heavy cream and stir till mixed well
Add ¼ cup parmesan cheese at a time until you get your desired flavor
Remove onion and garlic from bisque and serve with grilled cheese or your favorite bread

    That bisque is not a recipe, it’s just a suggested process and has very little to do with Marcella’s sauce recipe. What gives?

      What is a recipe if not just a suggested process with ingredients? Marcella Hazan's sauce consists of the heirloom tomatoes, 5 tbsp butter, ½ white onion and pinch of salt. That is literally her recipe for tomato sauce. We added in the other ingredients. I'm not sure what gives with this comment
