This simple spring salad is gluten free, vegan, high in protein and comes together in just 30 minutes or less!

For the Salad
- Combine asparagus, edamame, shallots and artichokes together in a large mixing bowl.
- In a small bowl or jar combine the dressing ingredients, mix well and pour over the asparagus mixture. Serve and store in the fridge for the week!
