There is nothing better in the springtime than a delicious pan of green beans and new potatoes. It's the first offerings the garden gives and making a fresh dish from it will fill you up and make your taste buds sing. It's what gives us hope for the season in the garden! You can try different herbs. I love thyme or dill or basil in mine.

This dish is colorful, tasty, healthy and satisfying. It looks like spring time and gives us a lot of hope for what's to come in the season.

Ingredients

  • 1 pound of fresh green beans, washed, stemmed and snapped into pieces
  • 1 pound of fresh new potatoes
  • 1 tsp fresh thyme, chopped finely
  • 2 Tbsp butter
  • Salt and pepper to taste
Instructions

Fill pot with water.
Wash potatoes and cut if they are larger than a gumball.
Add potatoes and green beans into the water and salt well.
Cook until potatoes are fork tender, about 20 minutes.
Drain vegetables and return to pot.
Add butter and thyme and salt and pepper to taste.
Mix well and serve.
