Easy Vegetarian Halloumi Skewers

Tired of the same vegetarian curry, stir-fry or salad? Why not try a mediterranean style meal that is sure to shake things up!

Halloumi is a delicious meat substitute, it is mild cheese packed with flavour and has a fabulous texture to enhance vegetarian dishes. Grilling halloumi and roasted vegetables creates a tempting and satisfying meal for everyone to enjoy. You can add any vegetables you like but I always love including capsicum zucchini and onion!

Ingredients
for the skewers
  • Halloumi 250g
  • 1 medium zucchini
  • 1 medium capsicum
  • 1/4 of a white onion
  • 10 wooden or metal skewers
For the marinade
  • 2 tablespoons of garlic infused olive oil
  • 2 tablespoons of extra virgin olive oil
  • 2 teaspoons of dried or fresh oregano
  • salt and pepper to taste
Instructions
For the skewers
If using wooden skewers soak them in warm water for a minimum of 10 minutes. to prevent splinters. In the meantime prep the veggies.
Cut the veggies and halloumi all in similar sized cubes around 2cm size if possible.
Assemble the skewers and feel free to male your own combinations. I did a slice of capsicum, zucchini, Halloumi, onion capsicum zucchini Halloumi. Leaving a cm or two on either end of the skewer to turn.
For the marinade
In a separate bowl add the oils and oregano.
Then brush the skewers with the infused oil all over.
Method for cooking the skewers
Turn on the grill to medium heat. Line a baking tray with foil and add the skewers evenly spaced out.
Grill on all sides until golden and the veggies are tender. I turned them after 3 minute intervals and repeated this 3 times. for a total of 9-10 minutes of cooking or until the vegetables are soft and the cheese is golden.
Tips
  • You can add/ remove any vegetables you like to the skewers eg. mushrooms, sweet potato, eggplant etc. (potato, pumpkin and sweet potato may take longer to cook!)
  • If you can invest in some metal skewers you son't need to soak them beforehand and they can be reused for a more sustainable cooking method!
  • I love serving this with quinoa salad or rice dish for a complete meal!
