Isn't this salad cherrylicious? A beautiful combination of roasted red beets, cucumbers, scallions, cherries and fresh herbs makes this stone fruit salad so fresh and delicious that you would want to make all summer long. Plus, is a great a way to enjoy seasonal delicious cherries. Add goat cheese crumbled over the salad, a considerably basic simple vinaigrette and you are good to go!

Ingredients
Salad
  • 1 cup Roasted red beets
  • 1 cup of sliced cucumbers
  • 1 cup of pitted cherries
  • 2-3 scallions chopped
  • Fresh herbs dill and mint
  • 1/2 cup goat cheese or feta crumbled
Dressing
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • Salt
  • Freshly ground black pepper
Instructions
For the dressing
Combine all ingredients in a bowl and whisk together
Salad
Add all ingredients in a large bowl
Add half of the dressing and toss and combine well
Add crumbled goat cheese and more dressing if necessary
Serve and enjoy!
Tips
  • Use feta cheese instead of goat cheese. Or a baked Halloumi cheese will be a nice option.
  • Roast red beets covered on aluminum foil on 400 degree until soft and fork goes through for about one hour. Let it cool completely. Peel and save on the refrigerator to be used for different recipe for about a week.
