Summer in Michigan means a wealth of delicious produce, namely sweet corn, juicy tomatoes, and of course, cherries! Michigan cherries are so delicious and can be enjoyed all summer long. I just love the combination of cherries and almonds in desserts, salads, and this amazing French Toast! Definitely start with a quality loaf of Brioche bread - St. Pierre Bakery is my favorite. Dip each slice into a bath of eggs and milk flavored with a hint of almond extract. Then top with juicy fresh Michigan cherries, your favorite Cherry preserves or jam, sliced almonds, and a shower of powdered sugar! Take your ordinary French toast to the next level with this recipe!

Ingredients
Custard
  • 1 loaf sliced Brioche bread, St. Pierre Bakery highly recommended
  • 4 eggs, well-beaten
  • 1 cup milk (2% or higher fat)
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • pinch of salt
  • Butter for cooking
Garnishes
  • Powdered sugar
  • Your favorite cherry jam
  • Sliced or slivered almonds
  • Halved fresh cherries
Instructions

Combine all the ingredients for the custard and whisk well to incorporate all of the eggs.
Heat a large non-stick skillet over medium heat and add 1 T butter. Make sure it's sizzling!
Dip one slice brioche bread in the egg mixture, then quickly flip to the other side and place in hot skillet. Use your fingers! A fork will tear the delicate pieces of Brioche. My large skillet fits 3 slices of bread at a time. Cook about 3-4 minutes on first side until golden brown, then flip to other side for another 3-4 min.
Repeat with remaining slices of brioche, adding butter to pan as necessary for each batch.
Sprinkle powdered sugar atop the cooked French toast, add a dollop of cherry jam, some fresh cherries, and a sprinkle of almonds. Enjoy!
Tips
  • Cooked French toast can be kept warm in a low 250 degree oven if necessary.
  • Separate leftover slices with parchment or waxed paper, place in a zip top bag and place in fridge or freezer. French toast will reheat nicely in a toaster oven.
