This Middle Eastern breakfast is packed with veggies and protein. Shakshouka is a tomato based egg dish that is super quick to make and only requires one dish!


The word shakshouka actually means 'all mixed up', and that is basically what we are doing with this meal. Mix up your veggies, sauce, and spices then add some eggs- easy as that!


I love Middle Eastern cuisine and first tried this yummy dish on a trip to Israel. You have probably never thought to cook your eggs in tomato sauce, but it creates a unique flavor that will not disappoint!


I used to order this dish at restaurants not realizing how simple it is to make. For those of you who do the same, try this fool proof recipe!

Ingredients

  • 1 bell pepper (red, yellow, or orange)
  • 1/2 white onion
  • 1 clove of garlic
  • 1 tbsp of olive oil
  • 1 small can of crushed tomatoes
  • 2 tsp paprika
  • 2 tsp cumin powder
  • 3 eggs (depending on size of the pan)
  • Salt & pepper to taste
  • Feta cheese
  • Parsley to garnish
  • Chili flakes to garnish
Instructions

Heat oil in a pan on medium heat
Dice the pepper and onion. Mince the garlic clove.
Add your pepper and onion to the pan. Sauté until softened then add the garlic.
Once softened, pour in a small can of crushed tomatoes. You want enough to fill the pan.
Season with paprika, cumin, salt and pepper then mix it all together.
Turn the heat down to low and place a lid over the pan to let the tomato base come to a slight boil.
Once boiling, remove the lid and create small dips/wells in the sauce using a spoon.
Crack the eggs into these areas then cover with a lid until the egg whites set.
Once the eggs are cooked to your liking, take off heat and sprinkle with chili flakes, fresh parsley, and feta cheese.
Serve with pita, toast, or bagel if desired and enjoy!
Tips
  • Za'atar seasoning also adds a nice flavour if you have it on hand!
  • Add roasted or sautĂ©ed eggplant and/or zucchini for some extra veggies
