Try this recipe for my go to sushi salad with wasabi soy dressing. If you are a sushi lover like me, this salad is a cheap way to avoid buying sushi at work every week. It retains the essence of traditional sushi in a new and easy way making It a yummy midweek lunch or a simple lazy dinner. It is also really nutritious as It is packed with whole grains, protein and lots of vegetables to keep you feeling full and radiant throughout the day, but most importantly it’s got an Asian flavour zing to keep those taste buds satisfied. Enjoy!

Simple Sushi Salad With Wasabi Soy Dressing

Ingredients
Salad recipe
  • 1/2 cup brown rice (cooked)
  • 1 can 185g tuna in oil (drained)
  • 1 medium carrot (washed and diced, skin on)
  • 1 Lebanese cucumber (washed and diced, skin on)
  • 1/2 a red capsicum (washed and diced)
  • 1/4 cup frozen edamame beans (thawed, I buy them from the Asian grocer and defrost them in the microwave)
wasabi dressing
  • 1 tablespoon of soy sauce
  • 1/4 teaspoon of wasabi
  • 1/2 teaspoon sesame oil
For garnish
  • Nori sheets (seaweed)
  • 1/2 teaspoon black sesame seeds
Instructions
Salad
In a medium mixing bowl add all salad ingredients and stir.
Dressing
In another small bowl, add all of the dressing ingredients and whisk until the wasabi has dissolved into the soy sauce.
Pour the dressing over the salad and mix well. Garnish with Nori and sesame seeds. It's that easy, enjoy!
Tips
  • If you don't have the vegetables above, no stress, use up what's left in your fridge eg. spinach, green beans, radish...etc.
  • You can buy precooked rice cups from the supermarket or may have left over rice in the fridge. Brown rice does take a bit longer to cook than white rice. If you don't have the time you can substitute it for basmati rice or quinoa which are very quick to cook. Cook these grains in accordance to the packaging.
  • Asian groceries are great to find new delicious ingredients to add to your cooking. I sourced the edamame beans, wasabi, black sesame and Nori sheets from my local Asian grocer.
  • Like when you choose your sushi rolls, you can change your filling for this salad. Bored of canned tuna? try soft boiled egg or teriyaki chicken, the combinations are endless!
