Chopped Italian Finger Sandwiches

We spend a lot of weekends on our patio in the Summer and I love choosing a few appetizers and small bites to make each week. I’ve seen these Chopped Italian Sandwiches all over the web and decided to take everything I love in a grinder and make them in small finger sandwiches, they were great!

I’m not sure why chopping everything up so small makes it taste better, but it does so I’ll just go with it.

Started with 1/2 lbs imported ham, sliced in small strips, you’ll do this same method for all the meats and cheese

Then chop the strips into small squares

a 1/2 lb of Genoa salami chopped the same way

1/2 lb of sandwich pepperoni

1/2 lb of provolone cheese

Throw that all in a large mixing bowl

I chopped up a half a jar of banana pepper rings, if you don’t like these feel free to leave out, but I love how they taste in these sandwiches

Red onion diced small is also something you can choose to leave out, but it does add a lot of flavor, I used 1/3 cup

add those to the chopped meat and cheese

And what would an Italian grinder be without shredded lettuce? I used the whole bag and chopped it up even finer

Add the lettuce to that big bowl of deliciousness

Add 3/4 cup mayo

1/4 cup Italian dressing

And a sprinkle or two of basil

Mix it all up and the filling is all set

I chose to use finger rolls, you can also use sub rolls, bulkie rolls, regular bread or a wrap.

Filled them all up pressing down a bit to make sure I got a lot in there!

Ingredients
For the filling
  • 1/2 lb imported ham
  • 1/2 lb Genoa salami
  • 1/2 lb sandwich pepperoni
  • 1/2 lb provolone cheese
  • 1/2 jar banana pepper rings
  • 1 bag shredded lettuce
  • 1/3 cup diced red onions
  • 3/4 cups mayo
  • 1/4 cups Italian dressing
  • sprinkle of dried basil
  • 24 finger rolls
Instructions
To make the filling
Chop all the sandwich meat, cheese, banana peppers, red onion and lettuce in small pieces
place that in a large mixing bowl
add to that mix, the Mayo, Italian dressing and basil
mix all thoroughly
fill each finger roll with the mixture
Tips
  • This is truly a customizable recipe, and just like ordering a grinder the way you like it, you can swap out the ingredients for these sandwiches to your liking!
