Slow Cooker Vegetable Chili
I have a recipe we love and you can easily adjust by adding or subtracting ingredients, and you can add meat if you like. You can see more of my crazy creations here
Ingredients
1/4 sliced onion
3 cups vegetable broth
2 cans black beans rinsed and drained
2 cups cooked pumpkin or squash of your choice (you could use 1 can of pumpkin as well)
1 cup chopped celery
1 cup chopped tomatoes
Add seasonings to taste – salt, pepper, chili powder, dried oregano, cumin, garlic
Optional – add turkey, chicken, or beef
Instructions:
Place all of the ingredients above in a slow cooker and place on high for 4 hours or preferably on low for 6-8 hours.

- Add seasonings to taste - salt, pepper, chili powder, dried oregano, cumin, garlic
- Optional - add turkey, chicken, or beefand drained
