Brocoli Apple Slaw
This salad is crunchy and sweet with a little tang from the addition of the dried cranberries. It is a very easy and fast recipe to put together. Do not add the dressing until an hour before otherwise it gets too wet. At first you will think you need to add more dressing but you want it to look almost dry, it definitely gets wetter the longer it sits. I used broccoli slaw, apples and candied pecans with dried cranberries. The dressing is a mixture of mayonnaise and sugar. First I cut up the apple, I used a Gala apple. I cut it into small bite size pieces. I put the slaw and nut mixture into the bowl and added the apple. I mixed the dressing together and kept it into a separate bowl until about an hour before our meal. Then I added it and mixed it all together. It was the perfect side salad to go with our lunch, plus I felt good the kids were getting some veggies in their meal and actually ate it.

Ingredients
For the slaw
- 1 Bag of broccoli slaw
- 1 Apple
- 1 bag of dried cranberries and candied pecans
- 1 C mayonaise
- 1/4 C granulated sugar
Instructions
For the slaw
- Chop the apple into bite size pieces
- Toss together all the veggies and the apple.
- Mix the mayonnaise and sugar together.
- Combine together an hour before serving.
- Serve cold.
- Store in a covered container in the refrigerator.
Tips
- This will keep well in the refrigerator for a couple of days.
